Lemon Cookies

A lemon cookie is a cookie that is soft, chewy, and made with lemon. There are many versions of the lemon cookie, some use fresh lemon or some use lemon juice like me. But either way, it still tastes the same. With these cookies, you can frost them or decorate them any way you want. You can even sprinkle them with powdered sugar. These cookies were definitely a big hit in my family.

These cookies would be good for any occasion. These would definitely be good at a tea party or just a tea for one. I can never make my cookies a perfect round circle. The great thing about this recipe is that with every recipe you can make it your own like add or subtract ingredients or even do your own measurements.

This is my first time making lemon cookies from scratch. I had made them in the past but it was from a box mix. I decided to make these for my daughter-in-law’s baby shower. She loved them. She thought they were sugar cookies and was surprised to learn that it wasn’t. She started eating them before the baby shower and told me that I might want to put them somewhere where she can’t see them. I love it when I bake something and people love what I bake. You could tell that my daughter-in-law enjoyed those cookies. There was even some leftover from the baby shower.

Equipment Need

* Cookie Scoop

* Cookie Sheet

* Mixing Bowl

* Spatula

* Measuring Cups

* Measuring Spoons

* Mixer

* Cookie Rack

* Parchment Paper

* Spoon (optional)

Preheat oven to 350 degrees

Cook Time: 8–10 minutes

Yields: about 41 cookies

INGREDIENTS:

1 cup of butter, softened

1 3/4 cups of sugar

1 egg

1 teaspoon of vanilla

1/2 teaspoon of lemon juices

1 teaspoon of baking soda

1/2 teaspoon of baking powder

pinch of salt

3 cups of flour

INSTRUCTIONS:

Preheat oven to 350 degrees. Place the parchment paper on the cookie sheets or if you don’t have any then grease the cookie sheet. Using a mixer (or a spoon) mix butter, sugar, egg, and vanilla together. Then add the lemon juice, salt, baking soda, and baking powder, mix thoroughly. Then add the flour. Mix all these ingredients together using a mixer. When it is dough-like, use the cookie scoop or a spoon and drop it on the parchment paper. Use a spatula and scrape the sides to make sure you get all the dough. Place in the oven for about 8–10 minutes. Baking time may vary depending on your oven. When it is done take it out of the oven let it cool before placing it on a cookie rack. Enjoy.

TIPS:

* Use parchment paper instead of greasing the cookie sheet. It is easier and, you don’t have to wash the cookie sheet.

* Use a cookie scoop instead of two spoons. It is easier.

* Using a mixer is faster and easier.

* If you leave out the butter at room temperature before you use it, it will make it easier to stir if not using a mixer. The butter must be softened.

After taking it out of the oven and letting it cool for a few minutes, then eat it with your favorite beverage and enjoy.
