Homemade Molasses Whoopie Pies

I love to bake and try out new recipes like this one. I love this recipe, and I think you will, too.
My mother makes these fantastic molasses cookies. You can use this recipe for the cookies, but my mother also uses this recipe to make whoopie pies. These pies are usually made with chocolate, but we love the molasses version.
Cook Time
Ingredients
- 1/2 cup shortening
- 1/4 cup sugar
- 1 egg
- 1 cup molasses
- 1 tablespoon lemon juice
- 3 1/2 cup flour
- 1 teaspoon cinnamon
- 3/4 teaspoon cloves
- 1/2 teaspoon ginger
- 1/2 teaspoon salt
- 1/3 cup boiling water with 2 teaspoon soda
Instructions
- In a bowl, sift together flour, cinnamon, cloves, ginger, and salt. In another bowl, mix together the shortening and sugar. Beat in the egg then add the molasses and lemon juice. Set aside. After boiling the water, add the soda and stir until it is dissolved. After this is done, add to the molasses bowl and stir together. Mix the flour mixture into the molasses bowl and stir. Place in the freezer for 2–3 hours to chill.
- After the allotted time, take out of the freezer. Place flour on the table and roll out the dough and cut with a cookie cutter. Place on a greased cookie sheet. Bake at 350 degrees for about 10 minutes. Place on a cookie rack.
Frosting Recipe
This is the frosting recipe that we used for the molasses whoopie pies. You can use this recipe for any recipe.
Ingredients
- 2 cups confectioner’s sugar
- 3/4 cups shortening
- 2 egg whites
- dash of salt
- 1 teaspoon vanilla
Instructions
- In a bowl, cream together the confectioner sugar and shortening then add the egg whites. Mix. Then add the salt and vanilla and stir together.
- After the molasses cookies have cooled. Take a cookie and spread some frosting on it then place another cookie over the frosting. Do this for all the cookies. Eat and enjoy.
